Dosa



The most famous Cochin community pita bread. It is very soft and it is usually eaten with sauces like chammanthi, curry stews, chicken or meat dishes, you can fill it with every delicious and favorite stuffing . The basic dough is used for many variations.

Traditionally, dosa is eaten during the holidays and festivals, but in my kitchen I prepare all the time, because it is my kid's favorite, especially when it is hot and fresh. I usually prepare a large quantities and fry it just before eating, so that it will be remain hot and fresh. I do not recommend preparing in advance, but if you have left with remaining batter, it could be kept in the refrigerator in a closed container and be used in the next day, you just need to add a small amount of water, and mix well before frying.

If you still have a few dosa's left overs, just heat them up in a pan for a few seconds and it will be great!


Ingredients:

500 g white wheat flour

2 eggs size M

1/2 cup oil (100 ml)

30 g of dry yeast or half a half cube of yeast dissolved in 2 spoons of water

1 flat tablespoon salt

6-7 glasses of water (about 240 ml per cup)


preparation:

  1. put flour and yeast in a mixer bowl and mix

  2. Add oil, eggs and salt

  3. Gradually add the water and blend for 3-4 minutes until a smooth, liquid texture (like that of a pancake) is obtained.

  4. If you don't have an electric mixer, you can mix with a hand mixer well so that there will be no lumps.

  5. Add salt and mix for another minute

  6. You can add water / flour as needed

  7. Cover with a damp towel or plastic wrap and swell for about two hours

  8. Then mix well again to a smooth batter. You can add a little water as needed

  9. Heat a non-stick pan in a size of 25-30 cm oil it a bit just for the first time.

  10. Fill 3/4 ladle with the dough and pour into the pan

  11. When the top surface of the dosa is baked, turn it to the other side with a spatula for a few more seconds. The dosa should become beigeת and not burntת and only a few mm thick. This is a very soft pita. Even if it does not come out the first time, try several times until you reach the desired result.

  12. Place each one on top of each other on a plate or in a serving dish covered with a towel so the dosa will stay warm and soft.
